Finally, I have time to blog this 1-week old entry!  It all began early last month, where my classmate during pre-school and in junior college, Yuanshan, approached us to create an edible showpiece meant for 80 guests.  It would be in conjunction with her wedding solemnization ceremony on 11-Nov-07 at the Shangri-la. She was looking for something cake that goes high on chocolate content, but easy on the sugar and fat content.  Something that you won't feel much of a guilt after eating it.  Her concerns were valid: the trendy look of pretty cupcakes adds color to her wedding set-up, but the royal icing and marzipan would add on the calories. We gave her something chocolatey enough, as well as giving a regal look to match her wedding atmosphere (the main showpiece was 35 cm tall).  Since we were handling a huge quantity of cakes, it was good to provide brownies, as they pack a lot of punch, and are well-baked enough to remain stable for decorative purposes.  Lots of edible gold and ...

This is a 2 kg cake order, and for a 50-odd year old lady.  She specially requested something chocolatey, sticky, lovely, and happy.  We knew the answer very soon, and presented a mud cake of really sticky chocolate, garnished with decorative peaches and strawberries galore! Bon anniversaire, June! =============================== On a reçu un demande de gâteau à 2 kilo, et c'était pour fêter l'anniversaire d'une dame de 50 ans de plus.  Elle voulait qqch très chocolate, collante, jolie, et surtout qui lui plaît.  On lui a donné tout de suite un "mud cake" au chocolat vachement collant, et bien garnit de pêches décoratives et plein, plein, plein de fraises, hein! Alors, ça vous déjà fait saliver?

I've been getting these feedbacks from our loyal readers, so I better start writing something.  Haha... In fact, we were busy with some items that are part of, and also outside, our repertoire range.  And we expect more such orders to come along. So readers, don't blame me for being lazy by combining 2 blog entries into 1, ok? :P So, what's new: 1.  Hazelnut crunch cake - a birthday cake for to celebrate the 21st birthday of friend Huiping's sister.  3 layers of chocolate genoise sandwiching 2 layers of oh-so-crunchy hazelnut and bittersweet chocolate ganache, then topped with a satin ganache, and lastly dusted with cocoa.  The comments were encouraging! 2.  Quiche Lorraine - a food item serving more than 40 guests, and it's supplied to a coffee joint as a last minute request.  Lovely baked, the egg and cheese mix fill up the savory hand-rolled tart shell with generous bites of onions, bacons, and mushroom.  Drool...  3.  Pandan muffin and blueberry cupcake - the ang mo version ...
